Really MSG Dangerous for Health? This is the Expert Explanation

For many people, cooking with monosodium glutamate (MSG) is thought to interfere with health.

But according to food scientist Steve Witherly, author of Why Humans Like Junk Food, the use of MSG is very safe.


Witherly even uses MSG all the time in his home cooking.


"I use it a lot, I want to encourage children to eat a little healthier, so I sprinkle a little 'supersalt' (MSG) there.For example, I have whole wheat pizza, and my kids hate wheat, so I put it a bit of MSG in tomato sauce, and they eat it all, "he says.

He adds, "Broccoli is great if you add butter, garlic and MSG, savory dishes, and meat dishes, a bit of help (using MSG)," he explained.

Believe it or not, most scientists agree on this point.

The American Chemical Society says, "MSG can affect certain people when consumed in large quantities with empty stomach conditions, but it is very safe for most people."

MSG's bad reputation stems from some preliminary research, including a 1968 report on 'Chinese Restaurant Syndrome' that blames MSG for making people feel sick.

However, the longer MSG claims support has a negative effect.

The feelings of pain acquired after eating a meal with MSG may be caused by other foodstuffs, or overreaction to eating unhealthy foods.

"We did research at UC Davis, when I was there, we drank a glass with about 25 grams, and nothing happened," explains Witherly.

Eating more than 3 grams of MSG on an empty stomach proved to have unpleasant side effects for a small group of people, though not a serious problem.

MSG might even promote healthy eating, by not only making the cuisine more delicious, but also making the use of less salt.

MSG is a natural compound of glutamate and sodium.

Free glutamate acts as a flavor enhancer, and is found in high levels in many flavor enhancers: sardines (280 mg / 100 g), soy sauce (782-1.264 mg / 100 gr), and seaweed (1,378-3.190 mg / 100 gr) .As for the disodium inosinate and disodium guanylate substances, they are a five-prime nucleotide form, which is also found in breast milk and fungi.It seems harmless, and serves as a flavor enhancer when paired with MSG.
